Perfect hot weather drink - The Mojito!

It's hot here in Minneapolis.  The heat index is at 102 today.  Even though I recently caved and got an air conditioner after not having one for 6 years, on days like this it still helps to have the perfect summer cocktail in your hand, the mojito!   I planted some mint out side this spring and have been enjoying this cocktail throughout the summer.  I've never had anything more refreshing and can't believe I was missing out all these years!   The key is really the fresh mint leaves.  You can usually buy them at the store but I advise getting a small plant and keeping it in a windowsill.  You'll also need a lime, but if you only have that little squeezy plastic lime with juice don't let it deter you because it will still be very good!   There are several variations on mojito recipes and below is a good one.  Don't be afraid to adjust the recipe to your liking or invent your own!

Ingredients
  • 2 parts White Rum
  • 1 part Lime Juice
  • Soda Water
  • 10 Sprigs of fresh Mint
  • Ice Cubes
  • 2 Slices of Lime
  • 2 teaspoon of Sugar
In a tall glass muddle the sugar, lime slices and mint. Add a few ice cubes & the rum & lime juice.  Top up with soda water. Stir, sip, enjoy!
